We are genrally looking for a PH of between 5.2 and 5.7. The low PH (slightly acidic) environment prohibits the growth of foregn bacteria until the yeast can take over and dominate the wort. PH will also drop during fermentation and it is a good idea to check it if your fermentation stops, there is a good chance it’s due to low PH.

How does pH affect brewing?
The pH levels during various stages of the brewing process affect extract potential, beer color, hot-break formation, foam stability, hop oil extraction, hop bitterness and lauterability of the beer. It is also an important consideration for beer quality during storage as a low pH inhibits bacterial growth.
Generally, we need to lower the PH as this will inhibit the growth of forein bacteria until the yeast can fully populate and dominate the environment.

What is a pH meter and what is it used for?
PH meter, electric device used to measure hydrogen-ion activity (acidity or alkalinity) in solution. A pH meter is a scientific instrument that measures the hydrogen-ion activity in solutions, indicating its acidity or basicity (alkalinity) expressed as pH value. The principle of pH meter is the concentration of hydrogen ions in the solution e.g. it is the negative logarithm of an hydrogen ion.
