Chamomile Flowers (25g)

Chamomile has a long history as an herbal medicine and remedy. In gin, chamomile often expresses itself with notes that resemble the herb as a tea. Chamomile has a tropical, fruity floral smell that some say is redolent of apple and hay.

Chamomile as a plant is famed for its medicinal properties, having been used since the Middle Ages as a treatment for asthma, colic and stomach upset. If distilled on its own, other than the botanical’s warming floral tones, it also adds sweetness. Soft and succulent – it seems much clearer and more aromatic than when having it in a hot Chamomile tea. In gin it doesn’t dissipate (like violet) nor dominate (like lavender) either.

Other than using Chamomile in the infusions of gin, it can also be used to make recipe Gins. Here is a great recipe from www.bonappetit.com

Chamomile Gin Cocktail

Ingredients

Makes 8 Servings

1/4 cup dried chamomile flowers or 12 chamomile tea bags

6 tablespoons honey

2 cups London dry gin

3/4 cup fresh lemon juice

Preparation

Step 1

Mix chamomile and 6 Tbsp. very hot water in a medium bowl. Let stand for 1 minute. Stir in honey; mash chamomile with a wooden spoon. Let cool slightly. Strain mixture through a fine-mesh sieve into a pitcher, pressing on solids to release liquid. Discard solids in sieve. Add gin, lemon juice, and 4 cups ice to pitcher.

Step 2

Stir until ice is melted. Divide among chilled coupe glasses.
